Mexican Bowl with Black Rice

A perfect meal prep dinner to whip up any night of the week.

 2 cups Black Rice
 420 g Black Beans
 400 g Corn Kernels
 3 Tomatoes (diced)
 1 Red Capsicum (diced)
 500 g 5 Star Beef Mince
 1 Onion (diced)
 1 Avocado (sliced)
 40 g Taco Seasoning Pack
 ¾ cup Natural Greek Yoghurt

In a medium sized saucepan bring 4 cups of water to the boil. Once boiling add the black rice and turn heat down to simmer. Place lid on top of saucepan and stir occasionally.

Meanwhile, in a large saucepan begin sautéing the diced onion. Once translucent add the beef mince, stirring to break apart. Add the taco seasoning and a small dash of water.

In a large bowl, combine the diced capsicum, corn kernels and black beans to make a Mexican side salad (to add extra flavour add a dash of sweet chilli sauce).

Once the rice and meat has cooked, add a large spoonful of each to a bowl. Combine with a spoonful of the Mexican side salad. Top with a few slices of avocado and a dollop of natural greek yoghurt. Enjoy!
