Thai Beef with Rice: A healthy, aromatic and filling Thai inspired dish.

 2 tbsp Olive Oil
 3 Garlic Cloves (thinly sliced)
 1 Red Chilli (thinly sliced, remove seeds for a milder taste)
 500 g Good Quality Beef Mince
 1 tsp Salt
 ½ cup Chicken Stock
 1 Large Bunch of Basil Leaves
 2 Medium Carrots (thinly sliced)
 1 Red Capsicum
 250 g Snow Peas
 4 tbsp Fresh Lime Juice
 2 tbsp Fish Sauce
 2 cups White Jasmine Rice

Heat oil in a large frying pan or wok on medium heat. Add garlic and chilli, stirring until fragrant. Add minced beef, season with salt and break up with spoon, pressing down firmly to help brown and crisp lightly.

Meanwhile, bring four cups of water to the boil in a medium sized saucepan. Add rice, turn pot down to simmer and cover with lid. Let the rice cook slowly while preparing the remainder of your dish, stirring occasionally.

Add chicken stock to the mince. Combine carrots, capsicum and snow peas to the pan and stir to combine. Add the fish sauce and lime juice.

Cook until vegetables become soft and rice is ready. Add the basil to the dish just before serving to ensure it remains full with flavour. Serve Thai mince on a bed of rice with a fresh lime wedge.
