Zucchini Boats with Rice: A simple, yet different meal prep favourite.
Preheat oven to 200 degrees celsius. Lightly grease a large baking tray with oil, put aside.
Cut the zucchini in half lengthwise, then trim off the stem ends. Use a spoon to carefully scoop the flesh out of the zucchinis. Arrange the zucchini in the baking dish.
Heat the olive oil in a large pan over medium high heat. Add the mince, onion and garlic and cook for 4-5 minutes. Add the red kidney beans and pasta sauce.
Meanwhile, bring four cups of water to the boil in a large saucepan. Add two cups of rice and bring heat down to simmer, cover and let cook for approximately 15 minutes.
Spoon the mince mixture into the zucchini's and cover with cheese. Bake in oven until cheese is golden and zucchini's are soft.
Serve zucchini boats on a bed of rice and with any additional meat mixture.
